Yes. That's kind of the whole point. Ramble doesn't need to have been running while you traveled. Upload photos from any trip, any year, and we'll reconstruct it from the metadata.
No. It writes from what's actually in your photos: where you were, when, and how the days moved. Add a note and it'll use that too. It won't invent a restaurant you never went to.
